Alana's Beef Stroganoff

Alana's Delicious Beef Stroganoff

Here’s a recipe for the most delicious Beef Stroganoff you’ll ever have! Enjoy.

750g (1.5lb) Fillet Steak

125g (4oz) butter or substitute

1 Medium Onion

500g Small Mushrooms

Salt, Pepper

2 Beef Stock Cubes

2 Tbsp Tomato Paste (I LIke to Use Heaped Tablespoons)

300ml Carton Sour Cream (I Like to use ½ cup)

1 Teaspoon Cornflour

1. Ask a butcher to cut fillet in one piece. Carefully remove any fat or sinew from meat. Cut meat into 5mm (1/4 in) slices. Cut slices into 1cm (½ in) strips. (If meat is frozen for hr before hand it is easier to cut into thin slices).

2. Heat 60g of the butter in large frying pan until very hot. Add a ¼ of the meat, cook very quickly till golden brown, remove heat from pan immediately. Repeat with remaining meat a quarter at a time.

3. Add remaining butter to pan. Add peeled and finely chopped onion to pan, saute gently for a minute before adding mushrooms. Cook both ingredients until onion is browned and mushrooms are tender. Return meat to pan with salt, pepper, combined water, crumbled stock cubes and tomato paste. Stir until combined. Bring to the boil, reduce heat, simmer covered for 5 minutes.

4. Put Sour Cream and cornflour in a bowl, stir until well combined. Gradually add to meat mixture, stirring till mixture boils and thickens. The flavour is superb - and the meat will melt in your mouth!
